Roasted Sweet Potatoes

I absolutely love sweet potatoes. I think it may be a problem how much I love them. They are my go to side dish for breakfast, lunch, or dinner.

I justify my obsession by focusing on the health benefits of sweet potatoes:

  1. They are a complex carb, unlike while potatoes, which means that their natural sugars get released slowly into the bloodstream as a gradual source of energy. This avoids the blood sugar spikes that can happen with simple carbs. That is why sweet potatoes are considered a low glycemic index food.
  2. They are a great source of much needed vitamins and minerals such as Vitamins A, B6, C, and potassium.
  3. They are also a good source of fiber. Especially if you cook them with the skin on, as I prefer to do.

Ingredients
  1. 3 medium sweet potatoes (~6-7 cups)
  2. 1 tbsp vegetable or canola oil
  3. 1 tbsp extra-virgin coconut oil*
  4. 1 tbsp parsley (dried or fresh)
  5. 1 tsp garlic powder
  6. 1 tsp smoked paprika
  7. 1/2 tsp chili powder
  8. salt to taste
Instructions
  1. Preheat oven to 375 degrees.
  2. Line baking tray with a silicon baking mat or aluminum foil.
  3. Dice sweet potatoes into 1-inch pieces. You want the pieces fairly the same size, so they finish cooking at the same time. You can peel the potatoes if you want, I don't. I prefer the extra fiber and less work.
  4. Wash and dry potatoes. Place the potatoes on the baking tray in a single layer.
  5. Add the oils, spices, and salt to the potatoes. Toss to coat evenly.
  6. Bake 25-30 minutes until fork tender.
Notes
  1. Use all vegetable or canola oil if you do not have coconut oil.
  2. Keep the diced potatoes in a bowl or water as you cut the rest in order to avoid them darkening due to oxidation.
  3. If you like spicy food, feel free to increase the amount of spices. The sweetness of the potatoes will balance it.
  4. This is a basic recipe that can be easily adapted to your seasoning preferences.
