Nigerian Fried Rice – Happy Independence Day!

My homeland, Nigeria, is celebrating 56 years of independence today. 

I’m clearly biased, but I really do love my culture, including our food.

When I moved out of state for grad school, I realized just how much. I didn’t previously cook Nigerian food and was spoiled with mothers and older sisters who prepared the best for me.

I always shied away from cooking Nigerian food because it seemed so complicated. Plus, everyone cooks from the heart and has their own versions of recipes. This is hard for someone trying to learn. But I have grown to see that it really doesn’t need to be complicated at all.

This recipe for Nigerian Fried Rice is a staple dish that is served both at homes and in larger quantities for parties. It is simple to make and delicious. My favorite combination.

Stir Frying Rice and Spices

The first step is quickly stir-frying the rice and spices.  The curry/turmeric is what lends Nigerian Fried Rice its classic yellow color. Then simply add the chicken broth, reduce the heat, cover, and steam for 32 minutes.

Frying Diced Liver

I know that liver has a bad reputation in America for its starring role in fried liver and onion, which I’ve never had, but heard many horror stories about. This is the only form I have eaten liver in and it is really good and the traditional choice. But, if you are one of those previously traumatized by liver, feel free to substitute some finely diced sirloin or another cut of beef.

Stir-Fried Liver and Vegetables

When your rice is almost done cooking, steam the vegetables and then stir-fry them along with the diced liver.

Finish off by adding the stir-fried meat and vegetables into the rice.

Serve with the protein of your choice. I did a simple roasted chicken that I will post a recipe for next. You can do the same or add stir-fry some shrimp for it instead.

Ingredients
  1. 3 cups parboiled rice
  2. 6 cups low-sodium or no-sodium chicken broth, homemade or store bought
  3. 3 tbsp vegetable oil, separated
  4. 1 tsp curry powder
  5. 1-2 bay leaves
  6. 3-4 oz beef liver (or other cut of beef), diced into small cubes
  7. 12 oz frozen mixed vegetables
  8. Salt to taste
Instructions
  1. Heat 2 tbsp oil in large pan over medium-high heat
  2. Fry rice and spices until fragrant, 2-3 minutes. Stir continuously so it doesn't burn.
  3. Add chicken broth and bring to a boil.
  4. Cover, reduce heat to low, and simmer 32 minutes.
  5. Meanwhile, steam/boil frozen mixed vegetables and drain. I used the type that lets you steam it in the bag. The instructions said 6.5 minutes and that was perfect.
  6. Heat 1 tsp of oil in a smaller pan.
  7. Saute liver until browned on all sides and thoroughly cooked, about 3 minutes
  8. Add in vegetables and salt to taste. Fry 2-3 minutes.
  9. When time is up, uncover rice (careful of steam) and stir in vegetable and meat mixture.
  10. Cook over medium-high heat for 2-3 minutes. Stirring continuously.
  11. Serve hot with protein of choice. Sprinkle on fresh thyme if desired,
Notes
  1. Don't open the cover for the rice before the time is up. You will let out the steam that is doing the cooking.
