Bananas and peanut butter are a classic flavor combination. One of my go to “I don’t feel like cooking” foods is crunchy peanut butter spread on toasted whole-wheat bread (cold, soggy bread is sad) with honey drizzled banana slices in between.
Dry Ingredients for Banana Bread Waffles
This recipe for Banana Bread Belgian Waffles is inspired by that flavor combination. I take it up a notch by topping the waffles with spiced fried bananas and drizzling on peanut butter syrup.  So, you get all the flavors of banana bread and even more indulgence if you include the fried bananas and syrup.

The trick to perfect Belgian waffles is to separate your egg yolks and whites and then whip the egg whites until stiff peaks form.

If you want to serve these with fried bananas like I did here, I also include the directions for that below. It’s optional, but they do complement the waffles very well.

For the waffles
  1. 2 cups all-purpose flour
  2. 1 tbsp baking powder
  3. 1/2 tsp salt
  4. 1/4 tsp ground cinnamon
  5. 1/4 tsp ground nutmeg
  6. 3 eggs, whites separated (room temperature)
  7. 1 cup milk (dairy or nondairy)
  8. 2 overripe bananas mashed (about 1 cup)
  9. 1/4 cup brown sugar, packed
  10. 1/4 cup butter or extra-virgin coconut oil, melted
  11. 1 tsp vanilla extract
  12. 1/3 cup chopped walnuts (plus extra for garnish if desired)
For the bananas
  1. 1 ripe banana, sliced
  2. Cinnamon and nutmeg to taste
For the syrup
  1. 1/2 cup pure maple syrup or honey
  2. 1/4 cup creamy peanut butter
For the waffles
  1. Whisk flour, baking powder, salt, cinnamon, and nutmeg together in large mixing bowl.
  2. In a separate, smaller bowl, whisk together milk, brown sugar, mashed bananas, egg yolks, and vanilla extract.
  3. Stir wet ingredients into dry ingredients until smooth.
  4. Whip egg yolks with a hand mixer or in a stand mixer until stiff peaks form. Fold into batter, one half at a time.
  5. Fold in chopped walnuts.
  6. Cook waffles in preheated waffle maker according to manufacturer's instructions.
  7. Serve immediately or cool and freeze for later.
For the bananas
  1. Dust the bananas with the spices and lightly sauté in coconut oil over medium-heat heat.
  2. Remove from pan and place on a paper-towel covered plate to drain the excess oil.
For the syrup
  1. Add syrup/honey and peanut butter to a microwave-safe bowl or glass measuring cup.
  2. Heat for 30 seconds.
  3. Stir and then return to the microwave for 30 more seconds.
  4. Stir until well combined.
  5. Drizzle over waffles. Store reminder in a covered container in the refrigerator. Reheat as needed.
Notes
  1. Reheat frozen waffles with a toaster oven. This will give you the fresh off the waffle iron texture.
