Things have been really busy for me lately.
It can sometimes be tricky to find a great balance between working a full-time clinical psychology internship, trying to finish my PhD (why must my dissertation torment me???), self-care, and other responsibilties.
That is really my mood most days now.
So, that is why I appreciate simple weeknight meals like this Chicken and Broccoli Stir-Fry that take less than 30 minutes to make.
You’ll just need a few simple ingredients and most are staples you probably already have at home.
Simply sauté the chicken, the aromatics, the broccoli, and make your sauce.
You’ll have this Chicken and Broccoli Stir-Fry ready to serve before you know it.
Drizzle on some sesame oil if you want to amp the dish up with even more flavor.

Serve with the grain of your choice, such as this Chinese Fried Rice
- 2 tbsp vegetable oil
- Boneless, skinless chicken breasts, cut into 1-inch chunks (about 2 lbs)
- 3 tsp minced garlic
- 1-2 tsp grated ginger
- 4 cups raw broccoli florets
- 1 cup water or low-sodium chicken broth
- 1 tbsp arrowroot powder or cornstarch
- Heat wok or large skillet over medium-high heat.
- Add 1 tbsp of oil when hot. Brown chicken in batches until golden and cooked through, about 2-3 minutes on each side. Don't overcrowd the pan. Set aside.
- Heat other tbsp oil. Sauté garlic and ginger 30 seconds.
- Add in broccoli and sauté 3 minutes over high heat, stirring frequently to coat broccoli with oil.
- Carefully pour in 3/4 cup water or chicken broth and 3 tbsp low-sodium soy sauce.
- Mix arrowroot powder or cornstarch into remaining 1/4 cup water.
- Stir chicken back into pan and let reheat 2 minutes, stirring frequently.
- Add powder-water mixture, bring to a quick boil until sauce thickens and let thicken 1 minute.
- Serve hot over rice or noodles.
