5-Minute, Small Batch Mayonnaise

Homemade mayonnaise just needs three simple ingredients: eggs, lemon juice or vinegar, and oil. There’s no need for the sugars or soy you will often find in commercial mayonnaise.

The trick to mayonnaise is the emusification. This is easily accomplished with an immersion blender and a little patience as you slowly incorporate the oil. This gives you perfect mayonnaise in just a few minutes.

You can use this mayonnaise recipe as a base for an aioli.

Ingredients
  1. 1 large egg (freshest, best quality you can afford)
  2. 1/2 cup oil (vegetable, canola, extra light extra-virgin olive oil, etc.)
  3. half a lemon, juiced (or 1 tbsp vinegar)
  4. Salt, optional
Instructions
  1. Break egg into the cup of your immersion blender or a wide-mouth mason jar.
  2. Add lemon juice. Blend 1 minute to mix.
  3. While immersion blender is still on, very slowly drizzle in oil. Move the blender up and down in the liquid to emulsify.
  4. Blend until all the oil is added and the mixture thickens and turns smooth and white. It should take just a few minutes. Taste and add salt or more lemon juice if it needs a kick.
  5. Keep refridgerated and use within a week.

    Mine was slightly runny but I used avocado oil so I’m not sure if that would make a difference or will it thicken up in the fridge?
