Homemade mayonnaise just needs three simple ingredients: eggs, lemon juice or vinegar, and oil. There’s no need for the sugars or soy you will often find in commercial mayonnaise.

The trick to mayonnaise is the emusification. This is easily accomplished with an immersion blender and a little patience as you slowly incorporate the oil. This gives you perfect mayonnaise in just a few minutes.

How much does this make?
Mine was slightly runny but I used avocado oil so I’m not sure if that would make a difference or will it thicken up in the fridge?
