Coconut Rice and Beans – Perfect Jamaican-Inspired Side Dish!

If you are looking for a perfect side dish for any Jamaican entrees, such as this oxtail dish, look no further than this recipe for coconut rice and beans. 

This Jamaican-inspired side dish is traditionally made with pigeon peas, and called rice and peas. However, those beans are often replaced with red kidney beans like I do here, which are usually easier to find.

The aromatics are key as the flavor base for this dish and provide the perfect balance to the creaminess of the milk.

Ingredients
  1. 1 tbsp extra-virgin coconut oil or vegetable oil
  2. 1 cup diced sweet yellow onion
  3. 1 tbsp minced garlic
  4. 1 scotch bonnet/habanero pepper, minced (see note)
  5. 3 sprigs of fresh thyme
  6. 2 cups uncooked long grain white rice
  7. 1 (15.5 oz) can of dark red kidney beans, rinsed and drained
  8. 1 (14-oz) can of light coconut milk
  9. 2 1/3 cup water
  10. Salt, to taste
  11. Green onions, for garnish (optional)
Instructions
  1. Heat oil in large sauce pan over medium-high heat.
  2. Add onions and sauté.
  3. Add garlic, minced pepper, thyme, rice, beans, salt sauté 2 mins.
  4. Add coconut milk and water, bring to a boil until the liquid is mostly absorbed.
  5. Cover, reduce heat to low and simmer 25 minutes.
  6. Turn off heat and let remain covered for 10 minutes so the steam can finish cooking the rice.
  7. Fluff with a fork and serve.
Notes
  1. For less spiciness, leave the scotch bonnet/habanero pepper whole and just cook as is
